Maple syrup production may have slowed down for the time being, because of the cold weather, but it has already been an active season so far.
That’s the word from Dave Matthews at Matthews Maple Syrup who says they had their first boil around the 24th of February.
“That’s the earliest we’ve ever made syrup. It ran for a few days there, froze up, ran a few days, froze up and we got about 20 per cent of our crop so we’ve got over 900 gallons of syrup made already,” he said.
Matthews says the cold weather will be great for the horse-drawn wagon rides in the sugar bush, which are taking place all throughout March Break, along with taffy on ice.
“Anybody looking for stuff to do, there’s a good opportunity to get out and enjoy the remainder of the winter,” he added.
The syrup season officially kicks off tomorrow (Saturday) with the ceremonial tree tapping at 1 pm with local dignitaries on hand.
The 20th annual Powassan Maple Syrup Festival goes April 22nd.
